Why I haven’t updated in a few days…

It’s kinda hard to type with baby sleeping in the way….or up on the shoulder….  Hoping to get a post or two up soon.  I have them in my mind, but can’t type them out easily when trying to cuddle with my bug.  🙂

Having fun cooking

I absolutely love to cook.  I love to bake, too.  I really feel that it costs less to cook from scratch, and it tastes better too (and it’s healthier).  One of my favorite things to make is soup.  You can (almost) never mess up a soup.  Tonight I had a little ground turkey sitting in the fridge, so I made a taco soup out of it.  At one time I probably followed a recipe for it, but now I just wing it with what I have on hand.  Here’s how I made it tonight.

Taco Soup (2-3 servings)

  • 1/2 pound ground meat
  • 1/2 onion, chopped
  • 2 stalks celery, chopped
  • 1 can black beans (can use kidney beans, too)
  • 1 can diced tomatoes, with chilies
  • 1/2-1 cup frozen corn
  • 1/2-1 packet taco seasoning (I use some that I get from The Spice House)
  • 1 tsp garlic powder (more or less to taste)
  • 1 tsp chili powder (more or less to taste)
  • 1-2 cups chicken broth (I always have some in the freezer)
  1. Brown the meat with the onion and celery.
  2. Dump everything into a pot (including the juices from the tomatoes and the beans).
  3. Simmer for about 30 minutes.
  4. Garnish with shredded cheese.
Another thing I made tonight is maple butter.  I made this one other time, and I think it disappeared within 12 hours–it’s that good.
Maple Butter
  • 1 stick unsalted butter, softened
  • 1/4 c maple syrup
  1. Mix the maple syrup and butter together, using a food processor or a hand mixer.
  2. Enjoy on saltine crackers, toast, pancakes, etc.

Back to work

I started back to work today.  I can’t believe Alyanna is six weeks old already.  Mixed emotions is definitely how I would describe how I was feeling about going back to work.  I’ve missed my kids so much, so I was looking forward to seeing them again, yet I was sad about having to leave my family (since I’ve gotten use to being home with them).  Luckily, I only work half days, so that makes it fly by so quickly, and my coworkers and director are awesome.  My kids were so excited that I was back–I think my entire room (me included) were all smiles all day long.  They had a blast telling me everything they learned while I was gone.  I can say I absolutely love my job.  🙂

Dalton wrote about me for his handwriting practice today.  It almost made me cry!  “I feel sad that Mommy went to work.  She is the best Mommy in the world!  I love my Mommy the best! (except God).


I also have to share something I find very funny.  Alyanna absolutely loves the mobile over her crib.  She’s not sleeping in her crib yet, but we put her in it throughout the day.  I always ask her if she wants to go see her “friends,” and I swear she lights up!  She loves to watch them, and she’ll coo and smile at them.  I think she misses them sometimes and cries to see them.  Who knew a mobile could be so much fun?

Haven’t had much time for posting, been busy finishing this.  Alyanna’s Easter dress, and I am absolutely in love with it.

(These two were taken before I added the button and wove in my last ends–had to make sure it fit before I finished it 100%)

Time to start on the sweater and hat to go with it, but not tonight–maybe a project to start tomorrow.  🙂
